Vanilla Cupcakes
  1. Preheat oven to 350 degrees and line muffin tin with paper liners.
  2. In a bowl, sift flour, baking powder and salt.
  3. Mix vanilla extract with milk.
  4. Cream butter and sugar together until fluffy.
  5. Add the eggs one at a time and each time combine some the dry ingredients.
  6. Fill baking tray. 3/4 of each liner will suffice.
  7. Bake for 20-25 minutes.
  8. Allow to cool fully on a wire rack before frosting.
Espresso Frosting
  1. Combine the espresso with vanilla extract until well mixed.
  2. Whip butter in a mixer or with a hand mixer.
  3. Add in powdered sugar.
  4. Add espresso-vanilla mixture.
  5. Decorate and enjoy!
Recipe Notes


By varying the amount of espresso in the frosting, you can make these as strong or as weak as you wish.

This frosting is creamy so perfect piping is difficult, refrigerate for a little while if you’re feeling artistic!
