Cupcakes
  1. Heat oven to 350F (180C)
  2. Line cupcake tin with paper cases
  3. Whisk egg and sugar together until well combined
  4. Add flour, nutmeg, baking powder, vanilla, vegetable oil and milk (all remaining ingredients) and combine
  5. Partly fill cases with batter
Cinnamon Swirl
  1. Mix brown sugar, cinnamon and melted butter
  2. Add a drop of your mixture to each case and swirl with a toothpick. Do not combine fully. Set remaining mixture aside for later
  3. Add remaining batter to each case. Each one should be around 2/3 full
  4. Melt remainder of cinnamon mixture if it has begun to harden. Put it in a small jug or something with a lip. Pour a small amount into each case in a swirl shape
  5. Bake cupcakes for approximately 20 minutes or until you have a clean toothpick
Glaze
  1. Mix powdered sugar with vanilla and slowly add in milk, ensuring not to flood the mixture
  2. The mixture needs to be thick enough to not pour all over the sides of the cupcakes but not too thick that you cannot pour correctly
  3. Drizzle glaze over cupcakes when thoroughly cooled
